Preparing a simple meal is one of the most fundamental tasks one can undertake in the kitchen.

It appears that your current method for boiling eggs is unlikely to be the most effective one.

Researchers have determined the optimal method for boiling eggs so that the yolks are cooked to a smooth, creamy consistency and the whites are not overcooked and watery.

The only drawback, for those accustomed to a quick six-minute runny egg, is that the new method requires over half an hour to complete.

I experimented with 300 eggs to find the ideal method for cooking one in its shell, considering factors such as texture, flavor, and nutritional value.

They were comparing a hard-cooked egg, a soft-cooked egg, the "sous vide" version typical of high-end restaurants, and a complete new technique.

This technique, which switches an egg eight times between a pan of boiling water and a bowl of cold water, meets the ultimate goal, in the opinion of the experts.

It eliminates the issue of a perfectly cooked yolk and undercooked egg white, which occurs when an egg is boiled in its shell.

Researchers successfully heated the egg white to an ideal temperature of 85°C, and brought the yolk to almost its perfect temperature of 65°C.

The key is regularly removing the egg from the boiling water and then submerging it in cold water, thereby preventing the yolk from becoming overcooked and firm, while still allowing the egg white to become sufficiently heated to develop a pleasant texture.

Professor Ernesto Di Maio, senior author of the study from the University of Naples Federico II, who focuses on plastics in his usual work, came up with the 'periodic cooking' technique and prepared all 300 eggs at home in his own kitchen.

He exclaimed, "I thought the methods we use in materials science could craft the ideal egg, and the outcome is truly sublime."

I have converted 50 family and friends to my preference for eggs prepared this way, and they were served in combination with lemon and pepper at our research center's Christmas gathering.

It may take approximately thirty-two minutes to prepare this type of egg, and I'm aware that not everyone has the time to invest, but I firmly believe it is worthwhile for those you care about, as opposed to cooking them eggs in a manner that may not be ideal.

Researchers sought to enhance the quality of "sous vide" eggs that are cooked in a controlled low-temperature environment, typically between 140°F and 154°F, for at least an hour to produce a creamy yolk texture.

The problem, as Professor Di Maio points out, is that the egg white is cooked insufficiently, appearing clear and excessively liquid.

  1. Run a faucet into a saucepan and heat the water to its boiling point
  2. Place the egg within its shell in water for two minutes.
  3. Transfer the egg to a bowl of chilled water, at approximately 86°F (checked with a food thermometer) for two minutes.
  4. Please reimmerse it in the boiling water for two minutes, then transfer it to a bowl of 30°C water for two additional minutes.
  5. Repeat step four six more times
  6. After 32 minutes, your egg will be ready.

His team, led by a researcher who ironically was not fond of eggs, utilized complex mathematical modeling to determine the most effective method of cooking them.

They then used these methods to test them by shining light beams at eggs, determining their cooking level and nutrient content.

Eight expert taste testers evaluated hard-boiled, soft-boiled, sous vide, and periodically cooked eggs on criteria such as color, meltability, and softness.

Among the results, published in the journal Communications Engineering, it became clear that an egg cooked using the precursory technique possessed a sweeter and saltier yolk than a soft-boiled egg.

The yolk was very similar to a sous vide egg, yet the egg white was less soft, damp, and translucent.

It had a consistency that lay somewhere between that of a sous vide egg and a typically cooked soft-boiled one.

Professor Di Maio said: 'This egg is easier to spread on toast, unlike a sous vide egg, which soaks into the bread.

'However, it is still not suitable for being placed in an egg cup and consumed with toast, as that would necessitate a soft-boiled egg.'

The new method was discovered to yield eggs with superior nutritional content compared to the three other cooking techniques. Nevertheless, the researchers point out that further investigation is required to fully comprehend the cause of this discovered phenomenon.

Temperatures in the periodically-heated egg white fluctuated between 35°C and 100°C during cooking, while the yolk reached a temperature of 67°C and held steady there.
