Surreal feeling for city's first Michelin star chef

A chef from Cardiff has expressed that earning a Michelin star has been a long-standing aspiration of his.

status.

The founder, Tom Waters, described the experience as surreal, and the feeling is still taking time to settle in.

One of only 26 restaurants in the UK received a highly respected Michelin star this year.

"It's been a long-standing aspiration of mine, and it's incredible to witness it become a reality," he said.

Mr. Waters stated that he was not aware of the time when the Michelin star inspectors visited the restaurant.

"It's all very secretive. They have these undercover investigators who visit a few times a year," he said.

We have a very open kitchen, so I've managed to detect one of them, but generally, not.

They informed Michelin headquarters and I received an email two weeks ago stating that you've been invited to a ceremony, but unfortunately, no further details were provided beyond that.

It was only when Mr. Waters heard his name and the name of his restaurant announced during the ceremony, that he realized he had been awarded a Michelin star.

He said, "It's very nerve-wracking, but the sensation was indescribable. It was all those years of hard work finally bearing fruit."

Gorse, a restaurant, launched in Pontcanna, Cardiff in May 2024 following a series of temporary events.

Mr. Waters stated that his goal is to "reimagine traditional Welsh cuisine" while maintaining a "fun and relaxed" atmosphere.

"The goal was to showcase the finest Welsh products on the menu. We collaborate with Welsh farmers, farmers, artisans, and many local individuals," he said.

Since the restaurant gained this prestigious status, Mr. Waters stated, "It's incredible" to see that bookings have not decreased.

"He has been working diligently for a long time with the ultimate goal of returning here," he said.

It's truly amazing to host it in our home city, surrounded by all these incredible guests who have supported us from the very start.

We are truly grateful to all those who have backed us throughout the past two years.
